103/18 – Calzone – Sweet and Savoury:
A Turkish cafe has opened up near us and the owner is a lovely guy, really friendly. On our last visit he gave me some pizza dough to cook. It was the day before our holiday and a good opportunity to use up leftovers in the fridge! Calzone – Sweet and Savoury.
I have no idea how he made his dough but each dough ball was wrapped in cling film. It was slightly tacky to the touch but really easy to stretch and shape. I split a dough ball into two and applied some leftover pizza sauce, mozzarella cheese and some pepperoni then folded the dough over itself and crimped the edges.
I have tried Calzone on the Uuni before and they don’t seem to cope with high heat very well. I decided to use gas and drop the temperature a bit to try and avoid burning it.
It did take a bit of a beating but was better than previous attempts. I think the dough was too thin, I will try it again with a thicker dough.
Next up was the last bit of Nutella in a jar, spread over the dough then formed into a kind of half moon shape. This one came out a lot better but it was thicker.
Melted Chocolate!
Just a quick post this one. Calzone is a challenge but I will keep trying. Thicker dough definitely seems to help so I will go down that road further!
