093/18: Masala Omelette Wrap

093/18 – Masala Omelette Wrap:

I was having a read through Mowgli Street Food when I spotted Masala Omelette Wrap. It looked cracking in the picture so I fancied giving it a shot!

The Prep:

First off I made the Mowgli Chutney: Rapeseed oil, cumin seeds, mustard seed and curry seeds lightly fried then tomatoes, ginger, garlic, chilli powder, turmeric and green chilli were added. Next, a bit of salt then the mixture was cooked slowly for 15 minutes with a lid on before the lid was removed and a further 5 minutes of cooking. This can be kept in the fridge so could be made in advance.

Coriander and Cumin seeds blitzed in a coffee grinder. I had some cheese slices so diced them up rather than grating a block of cheese. Red onion and a red chilli finely sliced and coriander chopped.

The Cook:

The cheese, ground coriander, cumin and fresh coriander were heated, melted and mixed in a pan then put to one side.

The recipe says to use a chapati (wholeweat flour, cooked on a griddle) but we had some roti’s (refined flour, cooked on a tandoor) so I used those instead. A good covering of the Mowgli Chutney first. Masala Omelette Wrap

The cheese mixture had been put back in the pan along with 2 whisked eggs. Everything was mixed together then spooned onto the roti.

Time to Serve:

Rolled tightly and sliced.

Then the next batch, rolled a bit better second go.

They looked and smelt great, I wanted a double batch!

SUMMARY:

I can’t put into words how tasty this was, quite a simple dish but so tasty! The chutney was really nice and worth making extra to have in the fridge! The omelette was cracking, I ate two but that was gluttony! Just one would have been enough.Great tasting dish, good range of flavours that work well together. The only real change would be to cook the cheese at the same time as the egg as it cooled down and firmed up doing it first.
