I ate at Black Axe Mangal recently and one of the dishes I ate was Oxtail, Bone Marrow and Anchovy which was really tasty. Once the cookbook arrived I had to recreate it.

The Prep:

The prep for the BAM flatbreads started 3 days before the cook! It’s not a lot of work but you just need to be prepared in advance!

The oxtail is cooked the day before and left in the fridge overnight.

On the day of the cook I fired up the Ooni Pro with charcoal and Whisky Oak staves

The Cook:

Then cooked the flatbreads, I put these inside a freezer bag once cooked. The heat keeps them soft.

Bone Marrow into a Petromax pan then into the Ooni

Oxtail cut into bone marrow grove sized shapes then placed into the bone marrow and back in the Ooni.

Covered with parsley breadcrumbs.

Time to Eat:

Flatbreads brushed with melted bone marrow and served with the Oxtail, Bone Marrow and Anchovy.

It looked fantastic, I was looking forward to eating it!

SUMMARY:

This was quite a lot of work to cook and a lot of prep over the 3 days but it really was worth it. The flatbreads are the best I have made, so tasty and the dish itself was unreal.

Notes: Make more flatbreads!
 

Such a different dish this one, really worth making to challenge yourself and to make something so different!

I loved this pizza, carbs on carbs is a winner in my mind! Really tasty and one I would recommend and cook again.

Quality Chop House Burger

There are a couple of good looking burger dishes in the Chop House cookbook and this was up next.

Bacon pan cooked first.
