BBQ35/17: Surf and Turf for the kids (Fillet steak and Langoustines):
Fillet Steak and Langoustines: It was my youngest daughters 1st birthday and she loves bbq food, especially steak so I decided to cook her a bit of fillet steak and give her some langoustines to have with it to celebrate the day!
6 Langoustines from the local fishmonger were £10, I knew they were fresh because they were still alive!
I cooked the fillet steak first, simple reverse sear taking it to 45c indirect then up to 55c direct before leaving it to rest in foil for 10 minutes which is when I cooked the langoustines.
I had put the langoustines in the freezer for 10 minutes to put them to sleep then I sliced them down the middle (not all the way through) before turning them over and pushing down lightly to butterfly them. I applied a bit of oil then grilled them direct for 3 minutes then flipped them over for 1 minute. The smoke was from Hot Smoked lemon chips, very nice!
Quite a simple cook for a nice sunny day. The steak went down well with my daughter and she eat the langoustine meat once I plucked it out the shell.
Not a lot to change on this one, dead easy!
