138/18 – Grilled watermelon
Whilst I was out cooking the hot dogs my wife appeared with a surprise dish to cook – Grilled Watermelon.

We were having leftover hotdogs for dinner and needed something to have alongside it – I went to the fridge for inspiration and spied little that didn’t look like “salad” (it’s like winter here in Scotland already so a cold salad did not appeal) so I opted for the slightly odd choice of watermelon. There was about half left so I cut slices about 1/2 an inch thick (straight down to make a big circle) then chopped into quarters, leaving the skin on to keep it robust enough to turn when grilling. Next I made up a little sauce/marinade/coating/dip(?!) of 1 tbsp of maple syrup, the zest and juice of 1 lemon, the leaves picked from around 3 sprigs of thyme and 1/4 tsp of Aleppo pepper. I held chunks of melon over the bowl then spooned the sauce over then set aside. It was then grilled over direct heat for around 2/3 minutes on each side, basically till you get some char marks.
The Thuros was starting to cool down by the time we did these so they don’t look quite as striking as I’m sure they could have done with proper stripes.
SUMMARY:
I’ve never cooked this before but they were super tasty – I was worried it might be too sweet but it really wasn’t – quite a meaty texture and they took on a good smokey flavour. I’ll definitely try this again and I think the sharper taste of lime would probably work better than lemon, I might change up the pepper flakes for cumin or smoked paprika too.
