Not BBQ – Huevos Divorciados:

Second cook from Root and Leaf by Rich Harris, this time it was Huevos Divorciados.

 
I was going to cook this on a cast iron pan on the BBQ but I was out on my bike before breakfast and was short on time so cooked this in the kitchen.
Red Sauce: Tomatoes, red chilli and garlic.
Green Sauce: Onion, green chilli, garlic, tomatillos and coriander.
Beans: Black beans, cumin, smoked paprika and juice from 1/2 a lime.
 
Tortillas fried, layer of beans on top then a fried egg, topped with green sauce or red sauce, crumbled feta and some coriander.
They looked fantastic! I was looking forward to eating them.

Summary:

Quite a quick and easy dish to prepare but so tasty. I really enjoyed both types, hard to pick a winner!

You could speed this up on the day by prepping the sauces and beans the night before.
