Not BBQ – Paneer Sabzi:

Last week I posted my first blog post that wasn’t cooked on the BBQ. This week I am doing it again and it’s another dish from the Berber and Q cookbook – Paneer Sabzi.

The Prep:

Honeyed Walnuts: Walnuts, honey and cayenne pepper.

Paneer Sabzi

Walnuts toasted.

Paneer Sabzi

Then chopped and combined with the honey and cayenne pepper.

Lemon Dressing: Extra virgin olive oil, lemon juice and sumac.

Whisked together.

Chilli Pangratatta: Rapeseed oil, ciabatta, chilli seeds and garlic.

Breadcrumbs, fried in the oil with the chilli and garlic.

Paneer Sabzi: Pomegranate seeds, radishes, mint, parsley, dill leaves, chives, shallot, spring onion and ricotta cheese.

Sliced then mixed with the lemon dressing.

Salad in the bowl with a mound of ricotta, a mound of chilli pangratatta, the honeyed walnuts, pomegranate seeds and a bit of olive oil.

SUMMARY:

Another fantastic recipe from the book and such a tasty salad dish. This was supposed to be for my wife and I but she was out and I ate all of it! It was so tasty that I made it again the next day. As with the other recipes from the book it’s a real flavour explosion in each bite, highly recommend this one. It’s not BBQ but it’s fantastic!
