BBQ19/17 – Chipotle Steak Tacos with Guacamole:

Chipotle Steak Tacos: Fish Tacos on the Wednesday, Steak Tacos on the Friday -must have been in the mood for Tacos this week!

This was another recipe from Rich Harris’s great book “Fire and Smoke” and the Bavette was from Turner and George (£15.50 for a kilo). I didn’t get a photo of the Bavette before I cooked it which is a shame as it looked fantastic. I chopped it in half to cook half / freeze half and then I sliced the “cook” half into 4 equal sliced steaks and put them in a bowl.

I mixed Chipotle paste, cumin, salt and pepper and rubbed it into the steaks before covering the bowl with clingfilm and leaving it in the fridge for an hour.

The Guacamole was pretty easy to make (red onion, green chillies, garlic, lime zest and juice, avocados, coriander, salt and pepper) but tasted very nice.

I made the blackened tomato salsa first by direct grilling garlic and chillies on a skewer for 5 minutes, turning regularly. I put tomatoes and red onions on at the same time and took the red onions off at the same time as the skewers but the tomatoes took an extra 5 minutes to soften. I pushed the tomatoes through a sieve to remove the juice but keep the skins and chopped the garlic, chillies and red onions up before mixing with the tomatoes before adding lime juice, salt, pepper, sugar and coriander. I have to say, this tasted very nice indeed!

The steaks were cooked directly over Oxford Charcoal Oak for around 6 minutes (internal temp 55c) and I turned them a few times during the cook.

The tortillas were the soft corn ones by Wahaca from the supermarket. I wrapped them in foil and heated them up in the BBQ but they weren’t as good as when I heated them individually in a pan so I would revert to that method in future. Each tortilla was loaded up with the guacamole, some slices of steak, more guacamole, some of the salsa then some crumbled feta cheese.

Really enjoyed this meal, great dish to end the week on. Very easy to cook and quick to put together. It was pretty spicy as the steaks, guacamole and salsa all had chillies in but I had a bit of a cold so it blew the cobwebs away! I will need to calm it down slightly next time as my wife had to drink 3 pints of water whilst eating her tacos!
