066/18: Grilled Halloumi Burger with Smashed Avocado

One of the first BBQ books I bought was by DJ BBQ, nice little book with loads of great recipes in. When his new book came out I had to order it. First up was Grilled Halloumi Burger with Smashed Avocado.

I hadn’t even read the book properly when I decided to cook this but I found myself cooking for one and spotted a block of Halloumi in the fridge. After a quick flick through the book I spotted this recipe, decision made!

The Kit:

Quite some time ago I bought a little Prakti stove. I haven’t used it as much as I thought I would but for small or quick cooks it’s ideal so I decided to fire it up for this cook.

The Charcoal:

A few fistfuls of Oxford Charcoal Hardwood Lump. Approaching the bottom of the bag so will be moving on to Oak soon. I filled the Prakti from the top then lit a couple of flamers underneath.

The Prep:

A ripe Avocado was split, scooped from the flesh then smashed before lime juice was added.

Sumac, Cayenne Pepper and Paprika were mixed in a bowl for the seasoning mix.

The Halloumi block was sliced in half. I have been using my petty knife from Blenheim Forge a lot more lately, finding it a great multi purpose knife for most of my cooking prep.

The charcoal was pretty well lit through, fast to light and really hot! I left it a bit longer to calm down a bit. Grilled Halloumi Burger

The Halloumi was drizzled with rapeseed oil then the seasoning mix was sprinkled on top then the Halloumi was placed onto the grill!

After a couple of minutes it was time to flip the Halloumi over. The oil was causing a few flares up so I had been holding the grill a bit higher to avoid burning the cheese.

Time to Plate Up:

Really fast to cook this one! Once the Halloumi was off I toasted the split buns then spread some of the smashed Avocado on the base followed by chopped mint, Halloumi, pomegranate molasses, tomato slices and rocket. It looked impressive!

Time to Eat:

Bun lid on top, time to eat!

Great to see the sun out today, good opportunity to get a picture outside with natural light! Strange thing is I think I prefer the indoor shot with natural light!

Really enjoyed this dish, simple to prepare, easy to cook but what a combination of awesome flavours. The pomegranate molasses work so well with the avocado, rocket and tomatoes but the seasoning mix on the Halloumi is great too. All together it’s a great dish!
